Chicken schnitzel


  • 10-12 chicken tenders
  • 1 cup flour
  • 2 eggs
  • 1 cup bread crumbs
  • salt
  • canola oil for frying
  • parchment paper


  • pour the flour on a large piece of parchment paper
  • beat the eggs in a medium size bowl
  • pour the bread crumbs on a large parchment paper
  • using a hammer meat tenderizer flatten the chicken tenders to 1/4 inch thickness
  • salt each chicken tender individually
  • take one flattened chicken tender at a time, roll it in flour, dip it in the beaten egg, roll it in the bread crumbs, set on a plate
  • heat oil in a frying pan, fry the breaded tenders few minutes on each side
  • when done frying rest them on paper towel to remove some of the oil

Note: serve with mashed potatoes
